A staple at our house

Something I buy every time I go to the store is Arborio Rice (Italian Risotto Style Rice). Madison sometimes has problems with the texture of brown rice so I've found Arborio Rice to be the perfect alternate. I buy Wegman's brand which is MUCH cheaper than a national brand. If you don't have a Wegman's around most stores carry their own brand and it is cheaper and just as good. Its so easy to make, freezes well and has a nice thick consistency. This is something I make for the whole family to share.Here is Madison's favorite meal to serve over rice. I make a double batch and we enjoy together as a family one night and the rest goes into individual servings in the freezer.

This recipe is for a double batch of Turkey Chili

Ingredients:
3 pounds 97% fat free turkey (can substitute lean ground beef if you'd prefer)
1 packet Simply Organic Vegetarian Chili seasoning
2 28oz cans Hunts Tomato Sauce
2 cans Eden Organic Chili Beans (drained)

Directions:
1) Start Arborio Rice according to package directions (I use 3 cups uncooked rice & 6 cups water)
2) While rice is cooking brown ground turkey in a big pot on medium high until cooked thoroughly.
3) Stir in Chili seasoning and allow to cook for 1-2 minutes to meld flavors to the turkey.
4) Add tomato sauce and beans and continue to simmer on Low until rice is done.

Start to finish this meal takes me not even 30 minutes. It feeds four hearty portions and also makes 6-8 individual freezer portions depending on the size of your tupperware. This is our favorite quick meal and also the easiest meal to throw in a thermos and take along to a restaurant or to school with Madison.
